An amazing dish to which you can add whatever you fancy such as cooked chicken or turkey slices. Use a milder blue cheese if you prefer for the dressing – Dolce bleu is a good choice.
½ cup (119ml) mayonnaise
¼ cup (59ml) unsweetened almond milk
½ cup (118ml) heavy cream
½ tsp. lemon juice
¼ head iceberg lettuce, washed and torn
1 small bunch watercress, washed
2 slices ham, chopped
2 slices bacon, cooked and chopped
1 large egg, hard boiled and coarsely chopped
14 inch (36cm) piece of cucumber, peeled, seeded and chopped
1 small red bell pepper, seeded and chopped
⅓ cup (45g) Gorgonzola cheese, crumbled
1 ripe avocado, peeled and chopped
Salt and pepper to season
- In a small bowl mix together the mayonnaise, milk, cream, lemon juice and seasoning to taste.
- Set aside in a serve jug in the fridge.
- In 4 individual serve dishes layer the rest of the salad ingredients; lettuce, ham, egg, bell pepper, cucumber, bacon, Gorgonzola and avocado.
- Top with watercress.
- Serve the salad together with the cream dressing.
